Licorice Brita Cake is a lovely pastry for any sweet treat. Kouvola's Licorice Sauce and Licorice-Tartan Sauce are perfect for this! Sprinkle plenty of freshly baked Kouvola's Licorice Pieces on top.
Licorice Brita Cake
10–12 servings
- 150g butter
- 1 ½ dl sugar
- 4 egg yolks
- 3 dl wheat flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla sugar
- 1 ½ dl milk
Meringue:
- 4 egg whites
- 2 dl sugar
Filling:
- 2 dl whipping cream
- 250 g Mascarpone cheese
- 1 teaspoon vanilla sugar
- 1 dl or to taste Kouvola licorice sauce
- Kouvola Liquorice Pieces
Beat the room temperature butter and sugar until fluffy. Add the egg yolks one at a time, beating well. Add the mixed dry ingredients and milk. Beat until the dough is smooth.
Spread the dough on a baking sheet lined with baking paper. The dough layer will be thin, but it will be enough for the baking sheet.
Then prepare the meringue. Beat the egg whites in a bowl until stiff and add the sugar a little at a time until the meringue is beautifully white and firm. Spread the meringue on a cake plate. Bake at 175 degrees on the middle rack of the oven for about 25–30 minutes.
Meanwhile, prepare the filling. Whip the whipping cream until foamy. Whisk in the Mascarpone cheese, vanilla sugar and liquorice-caramel sauce or liquorice sauce.
Check the taste. Cut the cooled cake sheet into two or four parts and assemble so that you can spread the filling on each layer. Sprinkle Kouvolan Lakrtis licorice pieces on top of the filling.
Drizzle some more licorice-marzipan sauce or licorice sauce on top.
