In spring, of course, we treat ourselves to cottage cheese buns or cottage cheese pie. With this recipe, you can make either! If making the dough sounds too time-consuming, the recipe can also be made with ready-made bun dough.
Ingredients (16 buns)
Curd buns
2 ½ dl milk
25 g fresh yeast
1 dl sugar
1 teaspoon cardamom
1 egg (optional)
7-8 dl wheat flour
75-100 g butter OR
75-100 g margarine (optional)
Filling
1 dl Kouvola Licorice Licorice Sauce
300 g milk curd
¾ dl sugar
2 teaspoons vanilla sugar
1 tsp lime juice OR
grated lime peel (optional)
For lubrication
egg
For decoration
baking-resistant decorative granules
Guide
- Warm the milk to room temperature and dissolve the fresh yeast in it.
- Add sugar, cardamom and, if desired, an egg. Mix.
- Add the flour while kneading and finally knead in the melted butter or margarine.
- Let the dough rise in a warm place under a cloth for about 20 minutes.
- Knead the dough and roll it into a log.
- Divide into equal pieces and roll into small balls.
- Place the buns on a baking sheet lined with baking paper. Remember to leave room for them to rise.
- Let rise in a warm place under a cloth for 15-20 minutes.
- Use a drinking glass to make a hole in the center of the buns.
- Drizzle about 1 teaspoon of licorice sauce over each one.
- Mix the milk curd with sugar, vanilla sugar and lime juice or grated zest.
- Divide the curd filling into the holes and brush the edges of the buns with egg.
- If desired, sprinkle baking-safe decorative grains around the edges.
- Bake at 200 degrees on the middle rack of the oven for about 12 minutes.
