Juicy chicken steaks get a sophisticated taste from Kouvola's Licorice Powder . The accompanying rhubarb chutney also tastes like licorice and is wonderful to serve with various grilled dishes.
Ingredients (4 servings)
600 g chicken cutlets
½ dl olive oil
2–3 tablespoons Kouvola Licorice Powder
½ teaspoon salt
2 tablespoons soy sauce
2 garlic cloves
Rhubarb and liquorice chutney
500 g rhubarb pieces
1 large onion
1–2 garlic cloves
1 tablespoon fresh ginger
½–1 red mild chili
2 tablespoons Kouvola Licorice Powder
1 star anise
2 ½ dl jam sugar
Guide
Bring the chicken pieces to room temperature about half an hour before cooking.
Mix the olive oil with licorice powder, salt, soy sauce, chopped garlic cloves, and chicken pieces.
Stir the spice mixture until smooth. Let it marinate for about half an hour at room temperature or overnight in the refrigerator.
Meanwhile, prepare the chutney. Chop the rhubarb stalks.
Peel and chop the onion, garlic cloves, ginger and mild chili.
Put the ingredients in a saucepan and bring to a boil. Add the licorice powder, star anise and jam sugar.
Let it simmer gently for about 10 minutes. Cool.
Fry or grill the chicken pieces in a hot pan or grill on both sides until they are cooked through and the surface is nicely browned.
Serve with delicious rhubarb sauce flavored with licorice.
